Healthy recipe: homemade turkey burger

Swap a fat fuelled beef burger for a homemade tasty turkey burger - with herbs and spice!
Ingredients - to serve 1:
• 250g (9oz) turkey mince
• 1 egg yolk - beaten
• 4 spring onions - finely chopped
• 1 mild red chilli - deseeded with the white pith removed
• 2 cloves of garlic - crushed
• 1/2 tsp ground cumin
• 1/2 tsp ground coriander
• freshly ground black pepper
• 250g (9oz) turkey mince

• 1 mild red chilli - deseeded with the white pith removed
• 2 cloves of garlic - crushed
• 1/2 tsp ground cumin
• 1/2 tsp ground coriander
• freshly ground black pepper
What to do:
• Using a large bowl, combine the turkey mince with the remaining ingredients before popping the mixture into the fridge to marinate for at least one hour.
• Shape the marinated mixture into burgers and grill under a medium heat for 10 minutes.
• Turn the burgers and grill for a further 7 minutes until thoroughly cooked throughout.
• Serve with a wholemeal roll or toasted wholemeal pitta bread, homemade potato wedges and/or fresh mixed salad.

Top tip: if chilli makes your stomach churn, seasoning with sensible alternatives to salt - think additional herbs and less spicy spices - will still create a delicious dish that will tickle your taste buds without damaging your health and waistline.
