Healthy recipe: cranberry & quinoa bars
Swap a sugar fuelled breakfast bar for a healthy, homemade cranberry and quinoa bar.
Ingredients - to make 12:
• frylight spray
• 75g almonds - roughly chopped
• 75g cashews - roughly chopped
• 75g quinoa
• 60g pumpkin seeds
• 150g dried cranberries
• 2 tbsp runny honey
• 1 egg white

What to do:
• Heat the oven to 190C/fan 170/gas 5.
• Spritz and line a square brownie tin and a large baking tray with frylight and baking paper.
• Pop the almonds, cashews, quinoa and pumpkin seeds onto the prepared baking tray.
• Bake the (above) ingredients for 8-10 minutes until they resemble a golden appearance - they should also smell slightly fragrant!
• Transfer the baked mixture into a large bowl and set aside.
• Pop the dried cranberries and honey into a food processor and blitz with the egg white and 2 tbsp of water until a paste like consistency is created.
• Combine the cranberry paste with the nuts and seeds - stirring thoroughly.
• Transfer the combined mixture into the brownie tin - smoothing the surface using a spatula - before baking for 20-25 minutes until firm.
• Remove the baked mixture from the oven and set aside to cool inside the tin.
• Once completely cooled, turn out onto a chopping board and cut the mixture into even bars.
• Enjoy as a speedy snack or as a healthy homemade breakfast bar.
