Recipe of the week: veggie burgers with added herbs & spice

Bursting with herbs and spice, these oven baked veggie burgers are guaranteed to tickle those taste buds!
Ingredients - for the burgers:
• 150g dried quinoa
• 100g carrots - peeled and finely grated
• 400g chickpeas - rinsed and drained
• 1 tbsp mixed dried spice
• 30g of fresh coriander leaves and stalks
• 10g fresh mint leaves
• 10g fresh dill
• 6 spring onions - roughly sliced
• 2 medium eggs - beaten
Ingredients - for the salsa:
• 6 tomatoes - deseeded and finely diced
• 1/2 red onion - finely diced
• 1 cucumber - peeled, deseeded and finely diced
• 2 tbsp fresh mint leaves - finely chopped
What to do:
• Preheat the oven to 190C/fan 170C/gas 5.
• Cook the quinoa - according to your chosen brands instructions - and leave to cool.
• Mix the salsa ingredients and leave to chill until needed.
• Pulse the quinoa, carrots, chickpeas, spice, herbs, spring onions and one beaten egg in a food processor, season and continue to pulse until thoroughly combined.
• Divide the mixture into 8 and shape to resemble burgers.
• Place the shaped burgers on to a lined baking tray and brush with the remaining beaten egg.
• Spritz with low-calorie cooking spray and pop in the oven to bake for 15-20 minutes.
• Allow the burgers to cool until firm before serving with salsa and homemade spicy potato wedges.
