Delicious dessert recipe: fruit yogurt crunch


Bursting with vitamins and minerals, this antioxidant rich dish - a delicious fruit yogurt crunch - packs a powerful nutritional punch that's guaranteed to satisfy a sweet tooth without piling on the pounds.
Ingredients:
• 1 small banana - peeled and thinly sliced
• 4 tbsp blueberries - rinsed and drained
• 4 handfuls of raspberries or strawberries - rinsed, drained and hulled
• 100-200g natural or soya yogurt depending on personal preference
• 1 tbsp linseeds
• 1/2 tbsp hazelnuts
• 1/2 tbsp macadamia nuts
• 1/2 tbsp pumpkin seeds
• 1 tbsp flaked almonds
• 1 1/2 tsp xylitol
What to do:
• Mix the fruit together and spoon into the bottom of a glass or bowl - if using strawberries, washing them prior to hulling will prevent them from absorbing too much water and going soggy.
• Cover the layer of fruit with natural or soya yogurt.
• Whizz the linseeds in a food processor until crushed.
• Adding the hazelnuts, macadamia nuts and pumpkin seeds, continue to grind the nuts and seeds in the food processor until the mixture starts to resemble granola.
• Stir the flaked almonds and xylitol into the mixture until thoroughly combined.
• Sprinkle the granola like mixture over the layer of yogurt - topping with additional fruit if desired - serve and enjoy!
