Recipe: mini pizza muffins

Sensible swap...

Swap a fat (and calorie!) fuelled pizza for a mini pizza muffin!

Ingredients - to make two mini pizzas:

  • 1 wholemeal muffin
  • 50 - 100g reduced-fat mozzarella cheese (tweak to suit your preferred taste)
  • 50 - 100g tomato puree (tweak to suit your preferred taste)
  • topping/s of your choice - think mushrooms, peppers, pineapple, tomatoes, ham (watch that salt content!) and black olives.
What to do:
  • Preheat the oven to 180C/350F/Gas Mark 4.
  • Slice the muffin in half and place onto a baking tray - cut side up.
  • Spread a thin layer of tomato puree over each muffin slice and sprinkle with mozzarella cheese.
  • Divide your chosen topping/s between the muffin halves before popping in the oven to bake for 10-15 minutes - or until the cheese has melted and the muffin slices are toasted.
  • Serve alone or with a fresh salad.
Top tip: whether you lack the self control to consume precise portion sizes or struggle to excite and entice fussy eaters, a mini pizza muffin not only makes a tasty 'takeaway' with a healthier twist, but can be customized to create a fun food source that your youngsters will find fascinating - think turning a tasty topping into a fun face!
