Recipe: strawberry & lime iced tea

Recipe of the week: strawberry and lime iced tea

Taken from one of my favourite magazines - Healthy Food Guide - swapping a calorie fuelled alcopop for this strawberry and lime iced tea (with a twist!) not only cuts the calories, but replaces the added sugar found in alcohol for the intrinsic sugar found in fruit.

Ingredients:

  • 3 strawberry and lime fruit teabags
  • 25g fresh mint leaves
  • 2 tbsp runny honey
  • juice of 2 limes
  • 150g sliced strawberries
  • 25ml vodka
  • 500ml crushed ice cubes
What to do:
  • Pop the teabags into a jug and cover with 1 litre of boiling water.
  • Stir in the honey and half of the mint - leave to infuse for 15 minutes.
  • Once infused, strain, discard the mint and leave to cool.
  • Combine the cooled tea with the lime juice, 25ml of vodka and 100ml of cold water.
  • Divide the crushed ice cubes between six glasses and add the strawberries and remaining mint.
  • Pour the tea into each glass and serve - with or without additional strawberries.
Top tip: although single measure spirits contain less calories and units - 1 unit and 61 kcal per 25ml - in comparison to alcoholic beverages such as alcopops, cider and wine, alcohol still fails to provide any beneficial nutrients and is bursting with the sugar that we need to slash. Always pay attention to alcohol guidelines and remember that calories can quickly creep up when we're celebrating at Christmas parties!
