Healthy recipe: garbanzo bean free hummus
It's time to chuck the chickpeas in favour of tickling those taste buds with a healthy hummus that is not only bursting with taste and flavour, but guaranteed to create a creamy consistency that's completely garbanzo bean free!
Ingredients:
• 1 large courgette - chopped
• 60g sunflower seeds - soaked for 4-6 hours
• 50g sundried tomatoes - soaked for 2-4 hours
• 2 tbsp extra-virgin olive oil

What to do - to serve 4:
• Pop all of the ingredients into a food processor and blitz to create a thick and creamy consistency.
• Serve with your chosen selection of vegetables as a speedy snack, or pair with stuffed peppers and rice as part of a nutritious meal.
• Transfer the remaining mixture into an airtight container and refrigerate immediately - the hummus can be kept for up to 5 days.
