Swap: a shop brought bag of chicken nuggets.

For: a healthier, homemade alternative.

Ingredients - to make one portion:

  • x1 chicken breast
  • 1-2* slices of wholemeal bread - grated into crumbs
  • x1 egg - beaten
  • sensible seasoning such as herbs and spices - optional.
How to create the nutritious nuggets:
  • Slice the chicken into small segments and set aside.
  • Sprinkle your chosen seasoning over a bowl of grated wholemeal breadcrumbs (mixing these particular ingredients in a bowl will make the next step much more speedy!).
  • Dunk the petite chicken pieces into the beaten egg before rolling in the bowl of seasoned breadcrumbs.
  • Once all of the chicken pieces are thoroughly coated in crumbs, transfer them onto a tray and pop in the oven to cook for 15-20 minutes (or until the chicken is no longer pink).
  • Serve with sensibly seasoned potato wedges (homemade and oven cooked using frylight spray) as a healthier alternative to chips and a side salad.
The best bit: unlike the processed protein (and nutrient deficient additives) that's found in a battered bag of shop brought nuggets (many brands contain less than 50% 'chicken' and are bursting with far from innocent ingredients), this nutritious concoction combines complex carbohydrates - the type that provides a slow and sustained release of energy and is accompanied by an abundance of beneficial nutrients including fibre, B vitamins and a multitude of minerals - with a succulent source of pure protein - a mandatory macronutrient that's essential for your youngster's growth and development.
By opting for sensible seasoning as opposed to sugary sauces, you'll also encourage your tot to tuck into the tantalising tastes that will tickle their taste buds without tightening their trousers - an action that will drive them to develop a natural taste for nutritious foods full of flavour, as opposed to fast foods smothered in salt and/or sugary sauce.
